Baked Halibut in Olive Oil
Anglers should all have a recipe for baked halibut in their arsenals. Sure, sautéed, broiled, and grilled are great—but baked is the more versatile. You can bake year-round, easily adjust the seasonings to taste (and to calories, with added butter), and let your oven gently meld the flavors. Better yet, this handy recipe relies on basic kitchen staples: garlic, lemons, parsley, salt and pepper, your favorite olive oil. To these simple ingredients, which ensure that your fish stars on the plate, just add a sprinkling of chili flakes or smoked paprika for color and contrast, then garnish with cracked pepper and artichoke hearts. Almost any salad or side goes well with this dish, but I like steamed asparagus. And for spring, serve it all up with a lightly chilled rosé.
