Directions
- Using a food processor, add pistachios, almonds, curry powder, sesame seeds, and 2 Tbsp. of the chives. Mix for 20 seconds or until finely chopped. Spoon pistachio mixture onto baking sheet. Dredge salmon fillets in mixture, covering both sides.
- Pour olive oil into hot cast-iron skillet on medium to high heat. Sear both sides of salmon, about 1 minute per side or until golden brown (watch carefully because chopped nuts can burn easily if heat is too high). Salmon should be medium rare. Or bake in a 385 F oven until desired doneness.
- While salmon is resting, mix salt, pepper, honey, and lime juice in a bowl.
- Plate fillets, placing atop bell pepper slices and drizzling with honey-lime mixture. Sprinkle with remaining chives and serve with warm rice, parsley sprigs, and lemon wedges.
