Directions
1. In a medium bowl, mix together honey, soy sauce, lemon juice and chili sauce.
2. In a large saúte pan heated to medium-high, heat two tablespoons oil. When oil is shimmering, add salmon skin-side up and season with baking soda, salt and pepper. Cook salmon until deeply golden, about 6 minutes, then flip over and add remaining tablespoon of oil.
3. Add garlic to the pan and cook until fragrant, 30 seconds. Add the honey mixture and cook until sauce is reduced by about a third. It will coat the back of a spoon. Coat the salmon with the sauce.
4. Garnish with green onions and sesame seeds and serve with lemon wedges.
Helpful hints: Using the baking soda will change the pH of the fish helping to brown the fish and create more flavors.
Keep a close eye on the fish and the sauce. It can get dark quickly.
Side suggestions: Steamed jasmine rice and any stir fried vegetable, such as asparagus.
Pairing suggestion: Chilled sake or crisp dry beer such as Asahi.
